Wessex Mill's Flour is milled using wheat collected from farms surrounding the mill (The name of the farms can be found on the back of the pack).
Only the best wheat is selected and a traditional roller milling process is used instead of the modern energy-intensive method of debranning the wheat before grinding it into flour.
The flour is milled slowly; this means the flour doesn't heat up as much as other flour mills, preventing the protein from damage.
The entire process guarantees top quality bread time after time.
